Is it possible to edit the "Pay Deposit" text on a product page?

Yes, you can change the "Pay Now" and "Pay Deposit" text on a product page and even create your own markup, if you are comfortable editing PHP files. To do this, edit the template woocommerce-payment-plans-for-subscriptions/templates/single-product/product-subscription-options.php.
